breakfast kolaches

Sometimes I'm in the mood to cook (instead of buying) breakfast sausage kolaches. Yes, sausage. Not the nasty fruit filled legit kolaches. I like the unhealthy, delicious, sausage [abd cheese] in mind. It's so simple. I cut each slice of crescent in half so I have 16 instead of 8. The smokies are too small to use a full slice anyway. Lesson learned! Picture was taken before I learned to cut them in half.

And if you really want to be daring, replace sausage for ham in some!

Zucchini Noodles and stuff

So I saw this recipe for a Zucchini pesto. It entails making Zucchini noodles and mixing avocado mix with a couple things for the pesto sauce. I thought we could just do that for dinner, and maybe add some grilled chicken to the mix.

I forgot to get all ingredients to make the pesto, so I just smashed up avocado t make it more like a dip, baked the noodles (by the way, they shrink immensely once baked), and grilled some chicken. It still came out pretty good and all, but not like I intended.

stuffed chicken with cheese and bell peppers

I don't eat bell peppers, but this looked good so I had to try it. Turns out, I do like bell peppers now.

Although I thought this meal was good, here's my comments. 

Not enough cheese. 
Bell pepper took out some of the chicken flavor. 

Cody preferred it without the peppers.

Crockpot Meatballs

This is super easy to make, and doesn't take too long. I normally let it cook for 30 minutes to an hour, so the meat really soaks up the flavor.

Frozen Meatballs
1 jar Chili Sauce
1 jar Grape Jelly

Mix all three together and cook on high in a crockpot.  YUMMO!

Baked Asparagus

I don't even like Asparagus, but it's supposed to be good for you, so why not.

OK, now after you have tried my baked asparagus, you may change your mind and like them, like I did.

These are so great!

I sprinkle them with:
salt, pepper, Mrs. Dash, Garlic Salt, Talwin seasoning, a thin layer of olive oil, a slice of butter.

then I wrap them up tightly in aluminum foil and bake for 45 minutes. Anything less, and it doesn't come out as good. On the picture below, I also baked some Tomatoes and zucchini.

Chicken and Rice with baked Zucchini

Ok now that you know how to make delicous baked zucchini, lets add it to a meal.

I grill chicken, seasoning with all the seasoning on the zucchini, and add Zesty Italian Dressing on top of it.

Add it to the George Foreman.

I boil rice.  Mix chicken rice and zucchini together as stir-fry. YUMMMY.

Bake Zucchini and Squash

This year, one of my new favorite foods is baked zucchini and squash. Sometimes I add cheddar cheese, or Parmesan cheese on top of it for extra flavor. 

I always season with:
Salt, Pepper, Mrs. Dash, Garlic Salt, Cheddar Seasoning, and Talwin Seasoning.

I then bake on 400 for 30-40 minutes.  Lesson learned: Put Aluminum foil down first, otherwise the pan is really hard to clean up.

Braised Pork Chops in Sour Cream Sauce



 I love love these pork chops! I'm blogging it so I can find the recipe again later.  It is from Pillsbury.  I mis-placed my cookbook that has this recipe when I moved, and it's so hard to search the internet and filter our 2 million pork chop recipes to find this one! whoo hoo I found them!!!

6 (4-oz.) boneless pork loin chops
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup beef broth
1tablespoon barbecue sauce
1/3 cup evaporated skim milk
1/3 cup nonfat sour cream
3 tablespoons all-purpose flour 
 

Steps

1 Sprinkle pork chops with salt and pepper. Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add pork chops; cover and cook 2 to 3 minutes on each side or until golden brown.
2 In small bowl, combine 1/2 cup of the broth and the barbecue sauce; mix well. Pour over pork chops; cover tightly. Reduce heat to medium-low; simmer 5 to 10 minutes or until pork is no longer pink in center. Remove pork chops from skillet; cover to keep warm.
3 In same small bowl, combine remaining 1/4 cup broth, evaporated milk, sour cream and flour; beat with wire whisk until smooth. Pour into same skillet; cook and stir over medium heat for 2 to 3 minutes or until bubbly and thickened. Serve sauce over pork chops

Nachos

Ok so I was very hungry FRIDAY night and I didn't know what I wanted. I had a very limited supply of food in the house so I just sort of fixed it all.

Chicken nachos. Yes please!
Taquitos. Yes please!
Regular nachos with picante sauce. Oh yes please!



I may have eaten like 1/2 of one plate and then let the dogs have a feast. This was a clear example of my eyes being way bigger than my stomach.

Chicken Alfredo

Not sure what to name it. It's just a mixture of my awesome seasoned chicken, and Alfredo noodles. This has to be like the best taste ever! At least for this meal it was oh my gosh so freaking Delish!!


I seasoned my chicken like I normally do.  

Chicken breasts
Coat the chicken in Mayo.  Season with Mrs. Dash, Salt, Pepper, Lemon Pepper. I then put the chicken in ziplock back and cover it 1/2 full with Zesty Italian Dressing, and the other 1/2 with Lemon juice.  I let it sit for at least 20 minutes, then throw the chicken on the skillet and cook (I pour the left over juices from the bag into the pan with the chicken so that it doesn't dry up). 
 
Cook the Alfredo noodles according to the package.
 
Mix chicken in with Alfredo noodles.

I often make season the chicken in bulk and freeze 3-4 chicken breasts per plastic bag, so I can pull it out quickly to cook.  You can coat in flour and fry and have amazing chicken nuggets/strips.  You can bake, broil, etc!  I also grill this on the George Foreman and mix it in with my salads.

Sausage sandwiches

In light of recent events, I decided to cook something easy for dinner. I'm actually not supposed to do anything, according to my dr.  but if you know me, you'll know that I will probably be on my deathbed and still piddling around doing SOMETHING. 

I cooked some bbq sausage links for Pete and my brother since they were working hard on my flooring.  My brother ended up not eating, so more for me!! :)



I guess since it's the dr orders to relax, I'll take a nice hot bubble bath too.

Quisadilla Time

Yummy!! I was working on a list of meals for the week and wrote down Quisadillas, and decided I really wanted this right now instead of later. So, this is what we had for dinner and it's so delicious!!! And super easy to make.


Grill up some chicken (you may want to season the chicken with salt, pepper, Mrs. Dash and anything else you want first).  Add Pepperjack and Cheddar cheese on top of a tortilla.  But butter on the frying pan and place the tortilla on it.  Add the chicken.  Add another layer of cheese on top of chicken.  Once the cheese starts to melt, add the top layer tortilla and press the sides down so it closes up on the cheese.  Butter the outside of tortilla and flip until golden brown. J

Breakfast Tacos

I love cooking breakfast. I only do it on the weekends when I'm not rushed, but it's what I enjoy waking up and doing. 

This week (and most weeks) we had breakfast tacos. O. Em. Gee. They are so delicious. I tried mimicking the best local taco truck in town, but it never came out as good. So then I added and tweaked and made my own. 



I use:
1/2 lb breakfast sausage 
Quite a lot of bacon4-5 eggs
Cheddar cheese
Tortillas

Start cooking the bacon. When you are 1/2 way, add the sausage. Drain. Mix the eggs in the with sausage and bacon. Turn off heat and add cheese to top. Then make your tortillas.

Crispy Ranch Chicken... It's what's for dinner


Tonight’s dinner is definitely inspired by Pinterest.  I found this recipe about a year or two ago and make it every once in a while.  Crispy Ranch Chicken.  Mmm mmm!!!

 It’s really easy to make, even though the ingredients seem a little, odd? 

 What you need:
Boneless skinless chicken breasts
1 oz package of the ranch dressing mix (not ranch dressing sauce!!)
2 cups of rice crispy cereal, crushed
¼ cup grated parmesan cheese
2 egg whites, beaten

 
Mix the rice crispy cereal, ranch mix and parmesan cheese together.  Dip the chicken in the egg whites, then cereal to coat evening.  Bake for about 30-45 minutes in 375 degrees until golden brown. 

 
I served mine with some Pork and Beans and Velveeta Shells and Cheese.

Beef Enchiladas

Decided to Stop and Smell the Roses, and link up with Lovely Little Things this monday and share a new recipe.

Yummy! For dinner yesterday, I decided to cook beef enchiladas, which I learned from my sister-in-law. It's so simple really. and super delish.



1 lb. Hamburger meat
Enchilada package mix
1 can tomato sauce
cheese
tortillas

Cook the enchilada package mix according to directions on package. Ground hamburger meat. Mix 1/2 of the sauce with the meat. Spread a little sauce on tortilla, place meat and cheese on tortilla, wrap. Pour more sauce and cheese on top of the enchiladas. Bake in oven for 10 minutes. Perfecto!

Monday Night Dinner

Tonight I'm making it an easy night for cooking. Simple and yet delicious. I am having Sausage Sandwiches. On the side, I am having some pork-n-beans as well. As a child, the sausage sandwiches were the only thing me and my brother ate for a while. In fact, Mom even cooked this when we went out of town to visit family, because that's about all we would eat. We were weird kids.

Sausage:
1 link of sausage (which ever brand you choose)
BBQ Sauce

Cut the links into bite size pieces. Boil water in a pan. Put the sausage in the boiling water. After about 20-30 minutes, pour most of the water out. Add bbq sauce. Cook for 10 more minutes. Put on bread, and eat.
